Lyonnaise Potatoes

  • 1 lb                                                     Yukon Gold Potatoes-Sliced Paper Thin
  • 2 Tb                                                    Butter
  • 1 c                                                       Heavy Cream
  • 1/2 c                                                   Shredded Swiss Cheese
  • To Taste                                              Garlic Salt and Pepper
  • For Garnish                                          Fresh Parsley

Pre-heat oven to 375.  Peel, slice, and wash potatoes. Melt butter in large oven proof skillet on stove.  Lay in potatoes in warm skillet. Garlic salt and pepper potatoes while stirring lightly and cooking potatoes on Med-High heat. Cook potatoes in skillet on stove for about 15 minutes or until nearly cooked through. Add cream and Swiss cheese;  stirring lightly and heating through. Garnish with fresh parsley. Place skillet  in pre-heated oven and bake for 15-20 minutes or until bubbly and golden brown on top. Allow to cool for a few minutes before serving.
